Vegan Lemon Potatoes (Lemonates Patates)

Ingredients

  • 2 lbs Potatoes
  • 1/4 cup Olive Oil
  • 1/4 cup Lemon Juice
  • 1/2 cup Water
  • 2 teaspoons Dried Oregano
  • 3 cloves Garlic

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Peel the 2 lbs of Potatoes. Cut them into wedges about 1-inch thick.
  3. 3In a large bowl, combine the 1/4 cup Olive Oil, 1/4 cup Lemon Juice, 1/2 cup Water, 2 teaspoons Dried Oregano, and 3 cloves of Garlic, which you have minced.
  4. 4Add the cut potatoes to the bowl. Toss them gently with your hands or a spoon until all the potato pieces are evenly coated with the olive oil and lemon mixture.
  5. 5Arrange the coated potatoes in a single layer on a baking sheet. Make sure they are not overlapping too much, so they roast evenly.
  6. 6Bake for 40-45 minutes. After about 20-25 minutes, carefully flip the potato wedges over on the baking sheet. Continue baking until the potatoes are golden brown and feel tender when poked with a fork.
