Vegan Kohlrouladen (Cabbage Rolls)

Ingredients

  • 1 each Large green cabbage
  • 1 cup Brown or green lentils, cooked
  • 1 cup Cooked brown rice
  • 1 medium Onion, chopped
  • 1 medium Carrots, grated
  • 2 cloves Garlic, minced
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 3 cups Vegetable broth

Instructions

  1. 1Fill a large pot with water and place it over high heat. Bring the water to a rolling boil (212°F / 100°C). Carefully remove the outer leaves from the 1 large green cabbage, one by one. Submerge each cabbage leaf in the boiling water for 2 to 3 minutes, or until the leaf becomes pliable and slightly translucent. Using tongs, remove the blanched leaves and set them aside on a plate to cool.
  2. 2In a large mixing bowl, combine the 1 cup of cooked brown or green lentils, 1 cup of cooked brown rice, 1 medium chopped onion, 1 medium grated carrot, 2 cloves of minced garlic, 2 tablespoons of tomato paste, 1 teaspoon of dried oregano, 1/2 teaspoon of smoked paprika, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix all ingredients thoroughly until they are evenly distributed.
  3. 3Lay one blanched cabbage leaf flat on a clean work surface. Place approximately 1/4 cup of the lentil mixture near the stem end of the leaf. Fold the sides of the cabbage leaf inward over the filling, then roll the leaf tightly from the stem end upwards to create a compact roll. Repeat this process with the remaining cabbage leaves and filling until all rolls are assembled.
  4. 4Carefully place the assembled cabbage rolls, seam-side down, into a large pot or Dutch oven, arranging them snugly in a single layer if possible. Pour the 3 cups of vegetable broth over the cabbage rolls. Place the pot over high heat and bring the broth to a rolling boil (212°F / 100°C). Once boiling, reduce the heat to low, cover the pot with a lid, and let the rolls simmer gently for 45 to 60 minutes, or until the cabbage leaves are very tender when pierced with a fork and the filling is heated through.
  5. 5Serve the Vegan Kohlrouladen hot.
