Vegan Kluski Śląskie (Silesian Dumplings)

Traditional Polish potato dumplings, made vegan and served with a simple mushroom gravy.

Ingredients

  • 4 medium Potatoes
  • 1 cup Potato starch
  • 1/2 teaspoon Salt
  • 1 cup Mushrooms
  • 1/2 medium Onion
  • 1 cup Vegetable broth
  • 1 tablespoon Soy sauce
  • 1 tablespoon Olive oil

Instructions

  1. 1Place the 4 medium Potatoes in a large heavy-bottomed pot and cover with cold water. Bring to a rolling boil over high heat, then reduce heat to medium and cook for 20-25 minutes, or until the potatoes are easily pierced with a fork. Drain the potatoes thoroughly and return them to the warm pot for 1 minute to allow any excess moisture to evaporate. Mash the potatoes until completely smooth, ensuring there are no lumps. Let the mashed potatoes cool completely in the bowl for at least 15 minutes.
  2. 2Measure the cooled mashed potatoes. Remove 1/4 of the mashed potatoes from the bowl and set aside briefly. Add the 1 cup Potato starch to the empty space in the bowl. Return the removed mashed potatoes to the bowl. Mix everything together with your hands until a cohesive dough forms. Add the 1/2 teaspoon Salt and continue mixing until fully incorporated.
  3. 3On a lightly floured surface (use a little extra potato starch if needed), roll the dough into a long, rope-like shape, about 1 inch thick. Use a knife to cut this rope into 1-inch thick slices. Gently roll each slice into a ball between your palms. Press your thumb into the center of each ball to create a small indentation.
  4. 4Fill a large heavy-bottomed pot with water and add a pinch of salt. Bring the water to a rolling boil over high heat (400°F / 200°C). Carefully drop the dumplings into the boiling water, ensuring not to overcrowd the pot (cook in batches if necessary). Cook the dumplings for 3-4 minutes after they float to the surface. They are done when they are puffed up and have a slightly firm texture when gently pressed.
  5. 5While the dumplings are cooking, prepare the mushroom gravy. Heat the 1 tablespoon Olive oil in a 10-inch skillet over medium-high heat (375°F / 190°C). Add the 1/2 medium Onion, finely chopped, and cook for 3-4 minutes until softened and translucent. Add the 1 cup Mushrooms, sliced, and cook for another 5-7 minutes until they have released their liquid and started to brown.
  6. 6Pour the 1 cup Vegetable broth into the skillet with the onions and mushrooms. Add the 1 tablespoon Soy sauce. Bring the mixture to a simmer over medium heat (300°F / 150°C) and cook for 5-7 minutes, stirring occasionally, until the gravy has thickened slightly. The gravy should coat the back of a spoon.
  7. 7Using a slotted spoon, carefully remove the cooked dumplings from the boiling water and place them on a plate. Serve the Vegan Kluski Śląskie immediately with the prepared mushroom gravy poured over the top.
