Ingredients

  • 4 cups Cooked Rice (day-old)
  • 1 cup Vegan Kimchi
  • 1 tablespoon Gochujang (Korean Chili Paste)
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Vegetable Oil
  • 1/2 medium Onion
  • 1/2 medium Carrot
  • 1 cup Shiitake Mushrooms
  • 2 stalks Green Onions
  • 1 tablespoon Toasted Sesame Seeds

Instructions

  1. 1Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. 2Add diced onion and carrot and cook until softened, about 3 minutes.
  3. 3Add sliced shiitake mushrooms and cook for another 2 minutes.
  4. 4Stir in the vegan kimchi and gochujang and cook for 1 minute.
  5. 5Add the cooked rice, soy sauce, and sesame oil. Mix well to combine.
  6. 6Cook for 5-7 minutes, stirring frequently, until the rice is heated through and slightly crispy.
  7. 7Stir in chopped green onions.
  8. 8Serve immediately, garnished with toasted sesame seeds.
