Ingredients

  • 4 cups Cooked Rice (day-old)
  • 1 1/2 cups Vegan Kimchi
  • 1 block Firm Tofu
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Gochujang (Korean Chili Paste)
  • 2 tablespoons Sesame Oil
  • 2 tablespoons Neutral Oil (e.g., canola, vegetable)
  • 2 stalks Green Onions
  • 2 cloves Garlic
  • 4 tablespoons Vegan Egg Substitute (optional)

Instructions

  1. 1Press the 1 block Firm Tofu to remove excess water. Cut the tofu into 1/2-inch cubes. Heat 1 tablespoon of the 2 tablespoons Neutral Oil in a 10-inch non-stick skillet over medium-high heat (400°F / 200°C). Cook the tofu cubes for 8-10 minutes, turning them occasionally, until they are golden brown and crispy on all sides. Remove the crispy tofu from the skillet and set it aside on a plate.
  2. 2Finely mince the 2 cloves Garlic and thinly slice the 2 stalks Green Onions, separating the white and green parts.
  3. 3Add the remaining 1 tablespoon of Neutral Oil to a large skillet or wok. Heat the oil over medium-high heat (400°F / 200°C) until it shimmers.
  4. 4Add the minced garlic and the white parts of the sliced green onions to the hot oil. Cook for 30-60 seconds, stirring constantly, until they are fragrant and the garlic is lightly golden. Be careful not to burn the garlic.
  5. 5Add the 1 1/2 cups Vegan Kimchi to the skillet. Cook for 3-4 minutes, stirring occasionally, until the kimchi is slightly softened and its aroma intensifies.
  6. 6Add the 4 cups Cooked Rice (day-old), 2 tablespoons Soy Sauce, 1 tablespoon Gochujang, and 2 tablespoons Sesame Oil to the skillet. Stir everything together very well, breaking up any clumps of rice and ensuring all ingredients are evenly distributed.
  7. 7Continue to cook for 5-7 minutes, stirring frequently, until the rice is heated through and starting to become slightly crispy. You should hear a gentle crackling sound.
  8. 8Stir in the reserved crispy tofu. If using, pour the 4 tablespoons Vegan Egg Substitute over the top of the fried rice and cook for 1-2 minutes until it sets into a thin 'egg' layer.
  9. 9Serve the Vegan Kimchi Fried Rice immediately, garnished with the green parts of the sliced green onions.
