Vegan Kedgeree with Smoked Tofu

Ingredients

  • 1 cup Basmati rice
  • 2 cups Water
  • 8 oz Smoked tofu, diced
  • 1 cup Frozen peas
  • 1 medium Onion, finely chopped
  • 2 teaspoons Curry powder
  • 1/2 teaspoon Turmeric powder
  • 1 tablespoon Olive oil
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped
  • 4 wedges Lemon wedges, for serving

Instructions

  1. 1Rinse the rice in a fine-mesh sieve until the water runs clear.
  2. 2In a saucepan, combine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and water is absorbed.
  3. 3Meanwhile, heat olive oil in a skillet over medium heat.
  4. 4Add onion and cook until softened. Add curry powder and turmeric, and cook for 1 minute more.
  5. 5Add smoked tofu and cook for 5-7 minutes, or until lightly browned.
  6. 6Stir in cooked rice and peas. Season with salt and pepper. Cook for 2-3 minutes, or until heated through.
  7. 7Garnish with fresh cilantro and serve with lemon wedges.
