Ingredients

  • 1 cup Sunflower Seed Butter
  • 6 cups Vegetable Broth
  • 1 medium Eggplant
  • 1 cup String Beans
  • 2 cups Bok Choy
  • 1 can Banana Blossoms
  • 2 tablespoons Annatto Seeds
  • 1/4 cup Water
  • 1 medium Onion
  • 3 cloves Garlic
  • 2 tablespoons Rice Flour
  • 2 tablespoons Soy Sauce

Instructions

  1. 1Soak annatto seeds in warm water for 30 minutes to extract color. Strain and set aside the colored water.
  2. 2In a large pot, sauté onion and garlic until fragrant. Add sunflower seed butter and rice flour. Cook for 2-3 minutes, stirring constantly.
  3. 3Gradually add vegetable broth and annatto water, stirring to avoid lumps.
  4. 4Add eggplant, string beans, and banana blossoms. Simmer for 20-25 minutes, or until vegetables are tender.
  5. 5Add bok choy and soy sauce. Cook for another 5 minutes.
  6. 6Serve hot with rice.
