Ingredients

  • 1 cup Cooked Japanese Rice
  • 4 cups Vegetable Broth
  • 1/2 cup Coconut Milk
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Ginger
  • 2 tablespoons Scallions
  • 1 tablespoon Toasted Sesame Seeds

Instructions

  1. 1In a medium saucepan, combine the cooked rice, vegetable broth, and grated ginger.
  2. 2Bring to a simmer over medium heat, then reduce heat to low, cover, and cook for 30-40 minutes, or until the rice is very soft and the porridge has thickened.
  3. 3Stir in the coconut milk and soy sauce. Cook for another 5 minutes.
  4. 4Serve hot, garnished with chopped scallions and toasted sesame seeds.
