Ingredients

  • 2 pounds Potatoes
  • 2 medium Yellow onions
  • 8 oz Smoked tofu
  • 2 cups Oat milk
  • 1/2 cup Breadcrumbs (gluten-free)
  • 3 tablespoons Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Peel and thinly slice the potatoes and onions.
  3. 3Dice the smoked tofu into small pieces.
  4. 4Grease a baking dish with olive oil.
  5. 5Layer potatoes, onions, and smoked tofu in the dish, seasoning with salt and pepper between layers.
  6. 6Pour oat milk over the layers.
  7. 7Sprinkle gluten-free breadcrumbs on top and drizzle with remaining olive oil.
  8. 8Bake for 50-60 minutes, or until potatoes are tender and the top is golden brown.
