Vegan Hungarian Stuffed Cabbage (Töltött Káposzta)

A delicious vegan version of the traditional Hungarian Stuffed Cabbage, filled with rice, lentils, and vegetables, simmered in a tangy tomato sauce. Completely nut-free and perfect for a hearty lunch.

Ingredients

  • 1 large head Cabbage
  • 1 cup Cooked Rice
  • 1 cup Cooked Green Lentils
  • 2 medium Onion
  • 1 medium Carrot
  • 4 tablespoons Tomato Paste
  • 28 oz Crushed Tomatoes
  • 2 tablespoons Sweet Paprika
  • 3 tablespoons Olive Oil
  • 1 1/2 teaspoons Salt
  • 1 teaspoon Black Pepper
  • 2 Bay Leaves

Instructions

  1. 1Carefully remove the core from the 1 large head Cabbage. Submerge the whole head in a large pot of boiling water and cook for 5-10 minutes, or until the leaves are pliable. Using tongs, carefully remove the cabbage from the water and set aside to cool slightly. Once cool enough to handle, gently separate the leaves, keeping them as intact as possible.
  2. 2Finely dice the 2 medium Onion and 1 medium Carrot. Heat the 3 tablespoons of Olive Oil in a large skillet over medium heat (350°F / 175°C). Add the diced onion and carrot and sauté for 8-10 minutes, or until softened and the onion is translucent.
  3. 3In a large bowl, combine the 1 cup Cooked Rice, 1 cup Cooked Green Lentils, the sautéed onion and carrot mixture, 4 tablespoons Tomato Paste, 2 tablespoons Sweet Paprika, 1 1/2 teaspoons Salt, and 1 teaspoon Black Pepper. Mix everything together until well combined.
  4. 4Lay out the prepared cabbage leaves. Place about 2-3 tablespoons of the filling onto the wider end of each cabbage leaf. Fold in the sides of the leaf, then tightly roll it up from the wider end towards the tip, creating a neat parcel.
  5. 5Line the bottom of a large heavy-bottomed pot with any torn or smaller cabbage leaves you may have separated. Arrange the stuffed cabbage rolls seam-side down in a single layer on top of the shredded cabbage.
  6. 6Pour the 28 oz Crushed Tomatoes over the cabbage rolls. Add the 2 Bay Leaves. Add enough water to just cover the rolls. Bring the liquid to a boil over high heat (450°F / 230°C), then reduce the heat to low (200°F / 95°C), cover the pot tightly, and simmer for 1.5 hours, or until the cabbage leaves are very tender.
  7. 7Remove and discard the 2 Bay Leaves before serving. Serve the stuffed cabbage rolls hot.
