Ingredients

  • 2 tbsp Olive Oil
  • 1 large Onion
  • 3 large Bell Peppers
  • 1 28 oz can Tomatoes
  • 2 tbsp Hungarian Paprika
  • 12 oz Vegan Sausage
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 4 serving Rice or Bread

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add chopped onion and cook until softened, about 5 minutes.
  3. 3Add sliced bell peppers and cook for another 5 minutes.
  4. 4Stir in diced tomatoes, paprika, salt, and pepper.
  5. 5Bring to a simmer, then reduce heat and cook for 20 minutes, stirring occasionally.
  6. 6Slice vegan sausage and add to the stew. Cook for another 10 minutes, until heated through.
  7. 7Serve hot with rice or bread.
