Ingredients

  • 3.5 cups All-Purpose Flour
  • 2.25 tsp Instant Yeast
  • 1/2 cup Sugar
  • 1/2 tsp Salt
  • 1 cup Plant-Based Milk (warmed)
  • 1/4 cup Vegan Butter (melted)
  • 2 tbsp Ground Cinnamon
  • 1/2 cup Brown Sugar
  • 1 cup Raw Cashews (soaked)
  • 2 tbsp Maple Syrup
  • 1 tsp Lemon Juice
  • 1/2 tsp Vanilla Extract

Instructions

  1. 1In a large bowl, combine the 3.5 cups All-Purpose Flour, 2.25 tsp Instant Yeast, 1/2 cup Sugar, and 1/2 tsp Salt. Add the 1 cup warmed Plant-Based Milk and 1/4 cup melted Vegan Butter. Mix with a spoon or your hands until a shaggy dough forms.
  2. 2Turn the dough out onto a lightly floured surface. Knead the dough for 5-7 minutes until it becomes smooth and elastic. Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  3. 3Punch down the risen dough to release the air. Roll the dough out on a lightly floured surface into a rectangle approximately 12x18 inches. Brush the surface of the dough with a little of the remaining 1/4 cup melted Vegan Butter (if you have any left, otherwise skip this step). Sprinkle evenly with 2 tbsp Ground Cinnamon and the 1/2 cup Brown Sugar.
  4. 4Starting from one of the long sides, tightly roll up the dough. Use a sharp knife to slice the roll into 8 equal pieces, about 1-inch thick each.
  5. 5Place the sliced rolls cut-side up in a greased 9x13 inch baking dish. Cover the dish with a clean kitchen towel and let the rolls rise for another 30 minutes, or until puffy.
  6. 6While the rolls are rising, prepare the frosting. In a blender, combine the 1 cup soaked Raw Cashews, 2 tbsp Maple Syrup, 1 tsp Lemon Juice, and 1/2 tsp Vanilla Extract. Add 2-3 tablespoons of water, one tablespoon at a time, blending until the frosting is completely smooth and creamy. Add more water, 1 tablespoon at a time, if needed to reach desired consistency.
  7. 7Preheat your oven to 375°F (190°C). Bake the rolls for 20-25 minutes, or until they are golden brown on top and cooked through.
  8. 8Remove the rolls from the oven and let them cool in the baking dish for about 10 minutes. Drizzle the prepared cashew frosting over the warm rolls before serving.
