Vegan Hungarian Bean Soup (Jókai Bableves)

Ingredients

  • 1 cup Dried White Beans
  • 1 large Onion
  • 2 medium Carrot
  • 1 medium Parsnip
  • 1/2 medium Celery Root
  • 12 oz Smoked Vegan Sausage
  • 2 tablespoons Sweet Paprika
  • 1 Bay Leaf
  • 8 cups Vegetable Broth
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Instructions

  1. 1Soak the dried white beans overnight. Drain and rinse.
  2. 2Dice the onion, carrots, parsnip, and celery root. Slice the smoked vegan sausage.
  3. 3Heat olive oil in a large pot. Sauté the onion until softened.
  4. 4Add the carrots, parsnip, and celery root. Cook for 5 minutes, stirring occasionally.
  5. 5Add the beans, smoked vegan sausage, sweet paprika, bay leaf, and vegetable broth. Bring to a boil.
  6. 6Reduce heat and simmer for 1 hour, or until the beans are tender.
  7. 7Remove the bay leaf. Season with salt and pepper. Serve hot.
