Vegan German Pretzel Dumplings (Semmelknödel)

Ingredients

  • 8 cups Gluten-Free Pretzel Bread
  • 1 cup Plant-Based Milk
  • 1/2 medium Onion
  • 2 tbsp Vegan Butter
  • 1/4 cup Fresh Parsley
  • 2 tbsp Tapioca Starch
  • 1 tbsp Nutritional Yeast
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1Cut the gluten-free pretzel bread into small cubes. Place in a large bowl.
  2. 2Heat plant-based milk and pour over the bread cubes. Let soak for 15 minutes.
  3. 3Sauté onion in vegan butter until softened. Add to the bread mixture.
  4. 4Add parsley, tapioca starch, nutritional yeast, salt, and pepper to the bread mixture. Mix well.
  5. 5Form the mixture into dumplings. Wrap each dumpling in cheesecloth.
  6. 6Bring a large pot of salted water to a simmer. Gently place the dumplings into the simmering water and cook for 20-25 minutes.
  7. 7Remove the dumplings from the water and unwrap. Serve hot with gravy or alongside other German dishes.
