Ingredients

  • 3 cups All-purpose flour
  • 2 1/4 teaspoons Active dry yeast
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 1/4 cups Warm water
  • 1/4 cup Baking soda
  • 8 cups Water, for boiling
  • 2 tablespoons Olive oil, for brushing
  • 1 tablespoon Coarse salt, for sprinkling
  • 1/2 cup Vegan mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 teaspoon Maple syrup

Instructions

  1. 1In a large bowl, combine flour, yeast, sugar, and salt.
  2. 2Add warm water and mix until a dough forms. Knead for 5-7 minutes until smooth and elastic.
  3. 3Cover and let rise in a warm place for 1 hour, or until doubled in size.
  4. 4Preheat oven to 450°F (232°C).
  5. 5In a large pot, bring 8 cups of water to a boil. Add baking soda.
  6. 6Punch down the dough and divide it into small pieces. Roll each piece into a long rope and cut into bite-sized pieces.
  7. 7Drop the pretzel bites into the boiling water for 30 seconds. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.
  8. 8Brush with olive oil and sprinkle with coarse salt.
  9. 9Bake for 12-15 minutes, or until golden brown.
  10. 10For the mustard dip: In a small bowl, whisk together vegan mayonnaise, Dijon mustard, and maple syrup.
