Ingredients

  • 2 lb Potatoes
  • 1/2 medium Onion
  • 2 stalks Celery
  • 1/2 cup Vegetable Broth
  • 1/4 cup Apple Cider Vinegar
  • 2 tbsp Dijon Mustard
  • 1 tbsp Maple Syrup
  • 2 tbsp Olive Oil
  • 1/4 cup Fresh Parsley
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1Boil the potatoes until tender, about 15-20 minutes. Let cool slightly, then peel and slice.

  3. 3In a small bowl, whisk together the vegetable broth, apple cider vinegar, Dijon mustard, maple syrup, olive oil, salt, and pepper.
