Vegan German Bread Dumplings (Semmelknödel)

Ingredients

  • 6 cups Stale bread, cubed
  • 1 cup Plant-based milk (e.g., soy)
  • 1/2 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1/4 teaspoon Nutmeg
  • 1 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/4 cup Flour
  • 4 cups Vegetable broth, for steaming

Instructions

  1. 1In a large bowl, soak the cubed bread in plant-based milk for 15 minutes.
  2. 2In a skillet, sauté onion and garlic until softened.
  3. 3Add the sautéed onion and garlic to the soaked bread, along with parsley, nutmeg, salt, and pepper.
  4. 4Mix well until everything is combined. Add flour and mix until a dough forms.
  5. 5Shape the dough into dumplings, about 2-3 inches in diameter.
  6. 6Bring vegetable broth to a simmer in a large pot.
  7. 7Place the dumplings in a steamer basket or directly into the simmering broth. Steam for 25-30 minutes, or until cooked through.
  8. 8Serve warm with your favorite vegan gravy.
