Ingredients

  • 1 cup All-Purpose Flour
  • 1 cup Plant-Based Milk (soy or oat)
  • 1 tbsp Flaxseed Meal
  • 3 tbsp Water
  • 2 tbsp Sugar
  • 1 tsp Vanilla Extract
  • 2 Apples (Granny Smith or Honeycrisp)
  • 1/2 tsp Cinnamon
  • 2 tbsp Vegan Butter (melted)

Instructions

  1. 1Preheat oven to 425°F (220°C).
  2. 2In a small bowl, whisk together flaxseed meal and water. Let sit for 5 minutes to form a flaxseed mixture.
  3. 3In a large bowl, whisk together flour, plant-based milk, sugar, vanilla extract, and applesauce until smooth.
  4. 4Peel, core, and slice the apples. Toss with cinnamon.
  5. 5Melt vegan butter in a 9-inch oven-safe skillet over medium heat. Add the apples and cook for 2-3 minutes.
  6. 6Pour the batter over the apples. Bake for 20-25 minutes, or until puffed and golden brown.
