Ingredients

  • 2 1/4 teaspoons Active Dry Yeast
  • 1 1/4 cups Warm Water
  • 1 teaspoon Sugar
  • 3 1/2 cups All-Purpose Flour
  • 1 teaspoon Salt
  • 2 tablespoons Olive Oil
  • 4 large, thinly sliced Large Onions
  • 3 tablespoons Olive Oil (for Caramelizing)
  • 1 cup Vegan Mozzarella Shreds
  • 2 teaspoons Dried Oregano

Instructions

  1. 1In a small bowl, combine the 2 1/4 teaspoons Active Dry Yeast, 1 teaspoon Sugar, and 1 1/4 cups Warm Water. Let this mixture stand for 5-10 minutes, or until it becomes foamy, indicating the yeast is active.
  2. 2In a large bowl, whisk together the 3 1/2 cups All-Purpose Flour and 1 teaspoon Salt. Pour in the foamy yeast mixture and 2 tablespoons Olive Oil. Mix with a spoon or your hands until a shaggy dough forms.
  3. 3Turn the dough out onto a lightly floured surface. Knead the dough for 5-7 minutes, or until it feels smooth and elastic. Place the kneaded dough into a lightly oiled bowl, turning it to coat all sides. Cover the bowl and let the dough rise in a warm place for 1 to 1.5 hours, or until it has doubled in size.
  4. 4While the dough is rising, prepare the caramelized onions. Heat 3 tablespoons Olive Oil in a large skillet over medium-low heat. Add the 4 large, thinly sliced Large Onions to the skillet. Cook, stirring occasionally, for 30-40 minutes, or until the onions are soft, golden brown, and sweet. This process requires patience; do not rush it.
  5. 5Preheat your oven to 450°F (232°C).
  6. 6Once the dough has doubled in size, gently punch it down to release the air. On a lightly floured surface, roll or stretch the dough into a large rectangle or circle that will fit your baking sheet.
  7. 7Transfer the rolled-out dough to a baking sheet. Spread the prepared caramelized onions evenly over the surface of the dough. Sprinkle the 1 cup Vegan Mozzarella Shreds and 2 teaspoons Dried Oregano over the onions.
  8. 8Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and the vegan mozzarella is melted and bubbly.
