Vegan Fried Rice with Edamame and Corn

Ingredients

  • 4 cups Cooked Rice (day-old)
  • 1 cup Edamame (shelled)
  • 1 cup Corn
  • 1 Carrot
  • 1/2 cup Peas
  • 3 tbsp Soy Sauce
  • 1 tbsp Sesame Oil
  • 2 tbsp Vegetable Oil
  • 2 cloves Garlic
  • 1 tsp Ginger

Instructions

  1. 1Place a wok or large skillet over medium-high heat. Add the 2 tablespoons of vegetable oil and the 1 tablespoon of sesame oil to the pan. Heat the oil until it shimmers, about 1 to 2 minutes.
  2. 2Add the 2 cloves of minced garlic and the 1 teaspoon of grated ginger to the hot oil. Stir constantly for about 30 seconds until they smell fragrant, being careful not to burn them.
  3. 3Add the 1 chopped carrot, 1 cup of shelled edamame, 1 cup of corn, and 1/2 cup of peas to the wok. Stir-fry these vegetables for 3 to 5 minutes, until they are slightly tender.
  4. 4Add the 4 cups of cooked rice (day-old) to the wok with the vegetables. Use a spatula to break up any large clumps of rice, ensuring it is separated.
  5. 5Pour the 3 tablespoons of soy sauce evenly over the rice and vegetables in the wok. Toss everything together thoroughly for 2 to 3 minutes, until the rice is heated through and evenly coated with the soy sauce.
  6. 6Serve the vegan fried rice immediately.
