Vegan Fried Rice

Ingredients

  • 4 cups Cooked Rice
  • 2 tbsp Vegetable Oil
  • 1/2 cup Carrots
  • 1/2 cup Peas
  • 1/2 cup Corn
  • 1/2 cup Onion
  • 3 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 2 cloves Garlic
  • 1 tsp Ginger

Instructions

  1. 1Place a wok or large pan over medium-high heat. Add the 2 tablespoons of vegetable oil and heat until it shimmers, about 1 minute. This is approximately 375°F (190°C).
  2. 2Add the 1/2 cup of onion, 1/2 cup of carrots, 1/2 cup of peas, and 1/2 cup of corn to the hot pan. Stir-fry for 5 to 7 minutes, until the vegetables are bright in color and slightly softened but still have a slight crispness when bitten.
  3. 3Add the 2 cloves of minced garlic and 1 teaspoon of grated ginger to the pan. Stir constantly for 30 seconds until fragrant. Be careful not to let the garlic or ginger burn.
  4. 4Add the 4 cups of cooked rice to the pan. Use a spatula to break up any clumps of rice and mix it with the vegetables. Cook for 2 to 3 minutes, stirring occasionally, to heat the rice through.
  5. 5Pour the 3 tablespoons of soy sauce and 1 teaspoon of sesame oil over the rice and vegetables. Stir everything together thoroughly for 1 to 2 minutes, ensuring the rice and vegetables are evenly coated and heated through.
