- 1Drain and rinse the 2 cans of fava beans. In a large heavy-bottomed pot, combine the drained fava beans with the 4 cloves of garlic (minced), 2 tbsp of lemon juice, 4 tbsp of olive oil, 1 tsp of cumin, and 1/2 tsp of salt.
- 2Place the pot over medium heat (350°F / 175°C). Cook for 30-40 minutes, stirring the mixture occasionally with a spoon. The beans are ready when they are soft to the touch and the liquid has thickened slightly.
- 3Using a fork or a potato masher, gently mash some of the fava beans against the side of the pot. This will create a creamier texture while leaving some beans whole.
- 4Once the beans have reached your desired consistency, remove the pot from the heat. Stir in the 1/2 cup of chopped tomatoes, 1/4 cup of chopped onions, and 1/4 cup of chopped parsley.
