Vegan Foul Medames with Injera

A hearty and flavorful Ethiopian-style Foul Medames (stewed fava beans) served with injera. Completely vegan and dairy-free.

Ingredients

  • 2 cans Fava Beans
  • 1 medium Red Onion
  • 2 medium Tomato
  • 3 cloves Garlic
  • 1 small Green Chili
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • 1 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 1 teaspoon Salt
  • 4 pieces Injera

Instructions

  1. 1Heat the olive oil in a large pot over medium heat. Add the diced red onion and sauté until softened, about 5 minutes.
  2. 2Add the minced garlic and chopped green chili (if using) and cook for another minute until fragrant.
  3. 3Stir in the diced tomato, cumin, and paprika and cook for 5 minutes until tomatoes soften.
  4. 4Add the fava beans and lemon juice to the pot. Mash some of the beans with the back of a spoon to thicken the stew.
  5. 5Simmer for 20 minutes, stirring occasionally, until the stew has thickened to your liking.
  6. 6Season with salt to taste. Serve hot with injera.
