Vegan Finnish Mushroom Pie (Sienipiirakka)

Ingredients

  • 1 package Vegan Pastry Dough
  • 1 lb Mixed Mushrooms
  • 1 medium Onion
  • 1 cup Vegan Cream
  • 2 teaspoons Fresh Thyme
  • 2 tablespoons Olive Oil
  • 2 tablespoons Nutritional Yeast

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Unroll the 1 package of Vegan Pastry Dough and carefully line a pie dish with it. Trim any excess dough from the edges.
  3. 3Place a 10-inch skillet over medium heat. Add the 2 tablespoons of Olive Oil. Once the oil is shimmering, add the 1 medium Onion, chopped into small pieces, and cook for 5-7 minutes, or until it looks soft and translucent.
  4. 4Add the 1 lb of Mixed Mushrooms, cut into bite-sized pieces, to the skillet with the onions. Cook for 8-10 minutes, stirring occasionally, until the mushrooms have released their liquid and started to look tender and slightly browned.
  5. 5Stir in the 1 cup of Vegan Cream, 2 teaspoons of Fresh Thyme, and 2 tablespoons of Nutritional Yeast. Cook for 2-3 minutes, stirring constantly, until the mixture is heated through and has thickened slightly.
  6. 6Pour the creamy mushroom mixture evenly into the pie crust-lined dish.
  7. 7Bake in the preheated oven for 40-45 minutes. The pie is ready when the crust is a deep golden brown and the filling is bubbling gently.
