Ingredients

  • 2 cups Dried white beans
  • 6 cups Vegetable broth
  • 4 tablespoons Tomato paste
  • 2 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 1 teaspoon Smoked paprika
  • 2 each Bay leaf
  • 2 tablespoons Olive oil
  • 1 teaspoon Marjoram

Instructions

  1. 1Soak the dried beans overnight. Drain and rinse.
  2. 2Dice the onion, carrots, and celery.
  3. 3In a large pot or Dutch oven, heat the olive oil over medium heat.
  4. 4Sauté the onion, carrots, and celery until softened.
  5. 5Add the drained beans, vegetable broth, tomato paste, smoked paprika, and bay leaf.
  6. 6Bring to a boil, then reduce heat and simmer for at least 1.5 hours, or until the beans are tender.
  7. 7Remove bay leaf before serving.
  8. 8Season with marjoram and salt.
