Ingredients

  • 1.5 cups Red lentils
  • 4 cups Water
  • 1 medium Red onion
  • 4 cloves Garlic
  • 1 tablespoon Ginger
  • 3 tablespoons Berbere spice blend
  • 2 tablespoons Tomato paste
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt

Instructions

  1. 1Rinse the red lentils thoroughly.
  2. 2In a pot, sauté the diced red onion in vegetable oil until softened.
  3. 3Add the minced garlic and ginger, and cook for another minute until fragrant.
  4. 4Stir in the berbere spice blend and tomato paste. Cook for 1 minute.
  5. 5Add the rinsed red lentils and water. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the lentils are soft and the stew has thickened.
  6. 6Season with salt to taste. Serve hot with injera.
