Vegan Ethiopian Lentil Stew (Misir Wot)

Ingredients

  • 1 cup Red lentils
  • 3 cups Water
  • 1 large Red onion
  • 4 cloves Garlic
  • 1 tablespoon Ginger
  • 3 tablespoons Berbere spice blend
  • 1 tablespoon Tomato paste
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt

Instructions

  1. 1Measure 1 cup of red lentils and rinse them thoroughly under cold running water until the water runs clear.
  2. 2Place a large, heavy-bottomed pot on the stove over medium heat (350°F / 175°C). Add the 2 tablespoons of vegetable oil.
  3. 3Add the 1 large red onion, 4 cloves of garlic, and 1 tablespoon of ginger to the pot. Cook, stirring often, for 5-7 minutes, or until the onion is softened and translucent.
  4. 4Stir in the 3 tablespoons of berbere spice blend and 1 tablespoon of tomato paste. Cook for 1 minute, stirring constantly, until fragrant.
  5. 5Add the rinsed 1 cup of red lentils and 3 cups of water to the pot. Increase the heat to high and bring the mixture to a boil.
  6. 6Once boiling, reduce the heat to low, cover the pot, and let it simmer for 30-40 minutes. Stir occasionally to prevent sticking. The lentils are tender when they are soft and have broken down slightly.
  7. 7Stir in the 1 teaspoon of salt. Taste and add more salt if desired. Serve the vegan Ethiopian lentil stew hot.
