Vegan Erwtensoep (Split Pea Soup)

Ingredients

  • 1 cup Dried Split Peas
  • 8 cups Vegetable Broth
  • 2 medium Carrots
  • 2 stalks Celery
  • 1 large Leek
  • 2 medium Potatoes
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Marjoram
  • 1 leaf Bay Leaf
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 cup Vegan Sausage
  • 6 slices Rye Bread

Instructions

  1. 1Rinse the split peas in a colander.
  2. 2In a large pot, combine split peas, vegetable broth, carrots, celery, leek, and potatoes.
  3. 3Add smoked paprika, marjoram, bay leaf, salt, and pepper.
  4. 4Bring the soup to a boil, then reduce heat and simmer for 1.5 hours, or until the split peas are tender and the soup has thickened.
  5. 5If using vegan sausage, add it to the soup during the last 30 minutes of cooking.
  6. 6Remove the bay leaf before serving.
  7. 7Serve hot with slices of rye bread.
