Vegan Egg Fried Rice

A quick and easy fried rice recipe without the eggs, but all the flavor.

Ingredients

  • 4 cups Cooked Rice
  • 1/2 cup Peas
  • 1/2 cup Carrots
  • 1/2 cup Corn
  • 2 stalks Scallions
  • 3 tablespoons Soy Sauce
  • 1 teaspoon Sesame Oil
  • 2 tablespoons Vegetable Oil

Instructions

  1. 1Heat the 2 tablespoons of vegetable oil in a wok or large skillet over medium-high heat, which is 400°F (200°C).
  2. 2Add the 1/2 cup of peas, 1/2 cup of carrots, and 1/2 cup of corn to the hot skillet. Stir-fry for 3 to 5 minutes, or until the vegetables are tender-crisp. You will see them become brighter in color.
  3. 3Add the 4 cups of cooked rice to the skillet with the vegetables. Stir-fry for 5 to 7 minutes, breaking up any clumps of rice, until the rice is heated through. You should hear it crackling slightly.
  4. 4Pour the 3 tablespoons of soy sauce and 1 teaspoon of sesame oil over the rice and vegetables. Stir continuously for 1 to 2 minutes until everything is evenly coated and well combined.
  5. 5Add the 2 stalks of chopped scallions to the skillet. Stir well for 30 seconds until the scallions are fragrant.
  6. 6Serve the fried rice hot.
