Vegan Dutch Split Pea Soup (Snert)

Ingredients

  • 250 g Dried Split Peas
  • 2 liters Vegetable Broth
  • 2 medium Carrots
  • 2 stalks Celery
  • 1 large Onion
  • 1 large Leek
  • 200 g Vegan Smoked Sausage
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Marjoram
  • 1 amount Bay Leaf
  • To taste amount Salt
  • To taste amount Black Pepper

Instructions

  1. 1Rinse the split peas and soak them in water for at least 1 hour.
  2. 2Chop the carrots, celery, onion, and leek.
  3. 3In a large pot, combine the split peas, vegetable broth, carrots, celery, onion, and leek.
  4. 4Add the smoked paprika, dried marjoram, and bay leaf.
  5. 5Bring to a boil, then reduce heat and simmer for at least 1.5 hours, or until the split peas are very soft.
  6. 6Remove the bay leaf. Use an immersion blender to partially blend the soup for a creamier texture.
  7. 7Slice the vegan smoked sausage and add it to the soup during the last 15 minutes of cooking.
  8. 8Season with salt and pepper to taste. Serve hot.
