Ingredients

  • 3 cups Self-raising flour
  • 1 tsp Salt
  • 1/4 cup Vegan butter
  • 1 cup Plant-based milk
  • 1 cup Bush tomatoes
  • 1/2 medium Onion
  • 2 tbsp Apple cider vinegar
  • 2 tbsp Brown sugar
  • 1 clove Garlic
  • 1 tsp Ginger
  • 1/4 tsp Chili flakes

Instructions

  1. 1Preheat oven to 200°C (400°F).
  2. 2In a large bowl, combine self-raising flour and salt.
  3. 3Rub in vegan butter until the mixture resembles breadcrumbs.
  4. 4Gradually add plant-based milk, mixing until a soft dough forms.
  5. 5Turn the dough out onto a lightly floured surface and knead gently for a few minutes.
  6. 6Shape the dough into a round loaf and place on a baking sheet.
  7. 7Bake for 30-35 minutes, or until golden brown and sounds hollow when tapped.
  8. 8While the damper is baking, prepare the bush tomato chutney.
  9. 9Chop bush tomatoes and onion finely.
  10. 10In a saucepan, combine bush tomatoes, onion, apple cider vinegar, brown sugar, garlic, ginger, and chili flakes.
  11. 11Bring to a simmer and cook for 20-25 minutes, or until the chutney has thickened.
  12. 12Let the damper cool slightly before slicing and serving with the bush tomato chutney.
