Ingredients

  • 8 oz Smoked Tofu
  • 2 medium Potatoes
  • 1 medium Onion
  • 4 cups Vegetable Broth
  • 1 cup Plant Milk (unsweetened)
  • 2 tablespoons Vegan Butter
  • 2 tablespoons Fresh Parsley
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Melt vegan butter in a large pot over medium heat.
  2. 2Add onion and cook until softened, about 5 minutes.
  3. 3Add potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
