Ingredients

  • 1 cup All-Purpose Flour
  • 1.5 cups Plant-Based Milk (Almond, Soy, or Oat)
  • 2 tbsp Vegan Butter
  • 1 tbsp Sugar
  • 1 tsp Vanilla Extract
  • 2 cups Mixed Berries (Fresh or Frozen)
  • 1 tbsp Lemon Juice
  • 2 tbsp Maple Syrup

Instructions

  1. 1In a blender, combine flour, plant-based milk, melted vegan butter, sugar, and vanilla extract. Blend until smooth.
  2. 2Heat a lightly oiled crêpe pan or non-stick skillet over medium heat.
  3. 3Pour 1/4 cup of batter onto the hot pan, tilting the pan to spread the batter thinly and evenly.
  4. 4Cook for 2-3 minutes, or until the edges are golden brown and the crêpe is set.
  5. 5Flip the crêpe and cook for 1-2 minutes on the other side.
  6. 6Repeat with the remaining batter, stacking the crêpes on a plate.
  7. 7In a saucepan, combine mixed berries, lemon juice, and maple syrup. Cook over medium heat until the berries soften and release their juices, about 5-7 minutes.
  8. 8Serve the crêpes warm with the berry compote.
