Ingredients

  • 3 cups All-Purpose Flour
  • 1 cup Vegan Butter
  • 1/2 cup Cold Water
  • 2 medium Potatoes
  • 1 medium Swede (Rutabaga)
  • 1 medium Onion
  • 1 tablespoon Olive Oil
  • 1/4 cup Vegetable Broth
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Turmeric

Instructions

  1. 1In a large bowl, combine the 3 cups of All-Purpose Flour and the 1 cup of Vegan Butter. Use a pastry blender or your fingertips to cut the vegan butter into the flour until the mixture looks like coarse crumbs. Gradually add the 1/2 cup of Cold Water, mixing until a dough forms. Wrap the dough tightly in plastic wrap and place it in the refrigerator to chill for at least 30 minutes.
  2. 2While the dough is chilling, prepare the filling. Peel and cut the 2 medium Potatoes into 1/2-inch cubes. Peel and cut the 1 medium Swede (Rutabaga) into 1/2-inch cubes. Peel and finely chop the 1 medium Onion.
  3. 3Preheat your oven to 400°F (200°C). Lightly dust a clean surface with a little flour. Unwrap the chilled dough and roll it out to about 1/8-inch thickness. Cut out four circles, each approximately 8 inches in diameter.
  4. 4On one half of each of the four pastry circles, arrange a layer of the cubed potatoes, cubed swede, and chopped onion. Drizzle about 1 teaspoon of the 1 tablespoon of Olive Oil over the vegetables on each circle. Sprinkle each with 1/4 teaspoon of the 1 teaspoon Salt and a pinch of the 1/2 teaspoon Black Pepper. Sprinkle about 1/6 teaspoon of the 1/2 teaspoon Turmeric over the vegetables on each circle.
  5. 5Carefully fold the empty half of each pastry circle over the filling, creating a semi-circle. Press the edges together firmly to seal. Crimp the edges decoratively to ensure the pasties are well-sealed. Brush the top of each pasty with 1 tablespoon of the 1/4 cup Vegetable Broth for color.
  6. 6Place the four sealed pasties onto a baking sheet lined with parchment paper. Bake in the preheated oven at 400°F (200°C) for 40 to 45 minutes. The pasties are done when the pastry is golden brown and firm to the touch.
  7. 7Remove the pasties from the oven and let them cool on the baking sheet for at least 10 minutes before serving. This allows the filling to set slightly.
