Ingredients

  • 1 lb Cremini Mushrooms
  • 2 medium Carrots
  • 1 medium Onion
  • 4 cloves Garlic
  • 4 slices Vegan Bacon
  • 1.5 cups Red Wine (Burgundy)
  • 1 cup Vegetable Broth
  • 2 tbsp Tomato Paste
  • 2 sprigs Thyme
  • 1 leaf Bay Leaf
  • 2 tbsp Olive Oil
  • 1 tbsp All-Purpose Flour
  • 4 slices Crusty Bread
  • 1 tsp Salt
  • 0.5 tsp Pepper

Instructions

  1. 1Chop mushrooms, carrots, onion, garlic, and bacon.
  2. 2Heat olive oil in a large pot over medium heat. Add mushrooms, carrots, onion, and bacon and cook until softened, about 8-10 minutes.
  3. 3Add garlic and cook for 1 minute more.
  4. 4Stir in flour and cook for 1 minute.
  5. 5Pour in red wine and vegetable broth, scraping up any browned bits from the bottom of the pot.
  6. 6Add tomato paste, thyme, bay leaf, salt, and pepper. Bring to a simmer.
  7. 7Reduce heat to low, cover, and simmer for 45 minutes, or until the vegetables are tender and the sauce has thickened.
  8. 8Serve hot with crusty bread.
