Vegan Colombian-Style Stuffed Avocado

Ingredients

  • 2 medium Avocados
  • 1 cup Cooked white rice
  • 1/2 cup Black beans
  • 1/2 cup Corn
  • 1/4 cup Red bell pepper
  • 1/4 cup Red onion
  • 2 tbsp Cilantro
  • 2 tbsp Lime juice
  • 1 tbsp Olive oil
  • 1/4 tsp Cumin
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Instructions

  1. 1Slice the 2 medium avocados in half lengthwise and carefully remove the pits.
  2. 2Dice the 1/4 cup red bell pepper and the 1/4 cup red onion into small, uniform pieces. Finely chop the 2 tablespoons of cilantro.
  3. 3In a medium bowl, combine the 1 cup cooked white rice, 1/2 cup black beans, 1/2 cup corn, the diced 1/4 cup red bell pepper, the diced 1/4 cup red onion, and the chopped 2 tablespoons cilantro.
  4. 4In a separate small bowl, whisk together the 2 tablespoons lime juice, 1 tablespoon olive oil, 1/4 teaspoon cumin, 1/4 teaspoon salt, and 1/4 teaspoon pepper until well combined to create the vinaigrette.
  5. 5Pour the prepared vinaigrette over the rice and bean mixture in the medium bowl. Stir gently to ensure all the ingredients are evenly coated with the dressing.
  6. 6Carefully spoon the seasoned rice and bean mixture into each of the 2 avocado halves, filling them generously.
  7. 7Serve the stuffed avocado halves immediately.
