Ingredients

  • 4 large Portobello mushrooms
  • 1 cup Fresh parsley, chopped
  • 1/2 cup Fresh oregano, chopped
  • 6 cloves Garlic, minced
  • 1/4 cup Red wine vinegar
  • 1/2 cup Olive oil
  • 1/2 tsp Red pepper flakes
  • 1 cup Quinoa
  • 1/2 medium Cucumber, diced
  • 1/2 medium Tomato, diced
  • 1/4 medium Red onion, finely chopped
  • 2 tbsp Lemon juice

Instructions

  1. 1In a medium bowl, combine the 1 cup chopped fresh parsley, 1/2 cup chopped fresh oregano, 6 cloves minced garlic, 1/4 cup red wine vinegar, 1/2 cup olive oil, and 1/2 teaspoon red pepper flakes to make the chimichurri sauce. Stir everything together until well combined.
  2. 2Place the 4 large portobello mushrooms in a shallow dish and pour the prepared chimichurri sauce over them, ensuring they are well coated. Let the mushrooms marinate for at least 30 minutes at room temperature.
  3. 3While the mushrooms marinate, cook the 1 cup quinoa. Place the quinoa in a medium saucepan with 2 cups of water and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes, or until the water is absorbed and the quinoa is tender. Let it stand, covered, for 5 minutes, then fluff with a fork.
  4. 4Prepare the quinoa salad by transferring the cooked quinoa to a large bowl. Add the 1/2 medium diced cucumber, 1/2 medium diced tomato, and 1/4 medium finely chopped red onion to the bowl with the quinoa.
  5. 5Add the 2 tablespoons lemon juice and 1/4 cup olive oil (from the chimichurri ingredients) to the quinoa salad. Gently toss all the ingredients together until the salad is evenly coated. Season with salt and pepper to your preference.
  6. 6Preheat your grill to medium-high heat, aiming for a temperature of around 400-450°F (200-230°C).
  7. 7Place the marinated portobello mushrooms directly on the preheated grill grates. Grill for 5-7 minutes per side, or until the mushrooms are tender and have grill marks, turning them once halfway through.
  8. 8Serve the 4 grilled portobello mushroom steaks immediately alongside the prepared quinoa salad.
