Vegan Canh Chua (Sour Soup)

Ingredients

  • 6 cups Vegetable Broth
  • 1 cup Pineapple
  • 2 medium Tomatoes
  • 1 cup Bean Sprouts
  • 1 cup Okra
  • 2 tbsp Tamarind Paste
  • 1 tbsp Sugar
  • 1 tbsp Soy Sauce
  • 2 cloves Garlic
  • 2 small Shallots
  • 1/4 cup Fresh Mint
  • 1/4 cup Cilantro

Instructions

  1. 1Heat vegetable broth in a large pot.
  2. 2Add chopped pineapple, tomatoes, bean sprouts and okra to the broth.
  3. 3In a small bowl, mix tamarind paste with warm water to create a tamarind juice.
  4. 4Pour tamarind juice into the pot along with sugar and soy sauce.
  5. 5Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. 6In a separate pan, sauté minced garlic and shallots until golden brown.
  7. 7Add sautéed garlic and shallots to the soup.
  8. 8Garnish with fresh mint and cilantro. Serve hot.
