Vegan Caldo Verde with Collard Greens and Potatoes

Ingredients

  • 2 lbs Yukon Gold Potatoes
  • 1 bunch Collard Greens
  • 1 large Onion
  • 3 cloves Garlic
  • 8 cups Vegetable Broth
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions

  1. 1Peel and dice the potatoes. Thinly slice the collard greens. Chop the onion and garlic.
  2. 2Heat olive oil in a large pot over medium heat. Sauté onion and garlic until softened.
  3. 3Add the potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until potatoes are tender.
  4. 4Using an immersion blender, blend about half of the soup until smooth.
  5. 5Stir in the collard greens and cook for 5 minutes, or until wilted.
  6. 6Season with salt and pepper. Serve hot.
