  • 2 tablespoons Olive Oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 1.5 pounds Potatoes
  • 6 cups Vegetable Broth
  • 6 cups Kale
  • 1 teaspoon Smoked Paprika
  • 0.75 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 1 tablespoon Lemon Juice

Instructions

  1. 1Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. 2Add the minced garlic and cook for another minute until fragrant.
  3. 3Add the cubed potatoes and vegetable broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.

  5. 5Stir in the chopped kale, smoked paprika, salt, and pepper. Cook for another 5-7 minutes, or until the kale is tender.
