Vegan Bun Cha (Grilled Vermicelli Noodles)

Ingredients

  • 8 oz Vermicelli Noodles
  • 1 block Firm Tofu
  • 1 medium Carrots
  • 1 medium Cucumber
  • 1 head Lettuce
  • 1/4 cup Mint
  • 1/4 cup Cilantro
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Maple Syrup
  • 2 cloves Garlic
  • 1/2 teaspoon Chili Flakes
  • 1/4 cup Water

Instructions

  1. 1Bring a large pot of water to a boil. Add the 8 oz Vermicelli Noodles and cook for 3-5 minutes, or until tender but still slightly firm. Drain the noodles and rinse them with cold water to stop the cooking. Set aside.
  2. 2While the noodles cook, prepare the tofu. Place the 1 block Firm Tofu on a clean kitchen towel or paper towels. Place another towel on top and press down firmly to remove as much water as possible. Cut the pressed tofu into 1-inch cubes.
  3. 3In a medium bowl, combine the tofu cubes with 2 tablespoons of Soy Sauce. Let the tofu marinate for at least 15 minutes.
  4. 4Prepare your grill or a grill pan for medium-high heat, around 400°F (200°C). Slice the 1 medium Carrots into thin rounds. Add the marinated tofu cubes and the sliced carrots to the hot grill. Grill for 5-7 minutes per side, or until the tofu is golden brown and slightly charred, and the carrots are tender-crisp with grill marks.
  5. 5While the tofu and carrots grill, prepare the dipping sauce. In a small bowl, whisk together the remaining 1 tablespoon of Soy Sauce, 2 tablespoons of Rice Vinegar, 1 tablespoon of Maple Syrup, 2 cloves of minced Garlic, 1/2 teaspoon of Chili Flakes, and 1/4 cup of Water. Stir until well combined.
  6. 6Wash and prepare the fresh ingredients. Tear the 1 head Lettuce into bite-sized pieces. Peel and thinly slice the 1 medium Cucumber. Roughly chop the 1/4 cup Mint and 1/4 cup Cilantro.
  7. 7Assemble the bowls. Divide the cooked vermicelli noodles among four bowls. Top with the grilled tofu cubes and grilled carrots. Add the lettuce, cucumber slices, mint, and cilantro to each bowl.
  8. 8Serve immediately with the prepared dipping sauce on the side for drizzling or dipping.
