Vegan Brazilian Coconut Rice Pudding (Arroz Doce)

Ingredients

  • 1 cup Arborio Rice
  • 2 cans Coconut Milk
  • 1 cup Water
  • 1/2 cup Sugar
  • 1 whole Cinnamon Stick
  • 1 tsp Lime Zest
  • 1/2 tsp Ground Cinnamon (for garnish)

Instructions

  1. 1Rinse the 1 cup of Arborio Rice under cold running water until the water runs clear. Drain well.
  2. 2In a large heavy-bottomed pot, combine the drained 1 cup of Arborio Rice, 2 cans of Coconut Milk, 1 cup of Water, 1/2 cup of Sugar, and 1 whole Cinnamon Stick.
  3. 3Place the pot over medium-high heat and bring the mixture to a boil. Once boiling, immediately reduce the heat to low, cover the pot, and let it simmer for 40-45 minutes.
  4. 4Stir the rice mixture frequently, about every 5-10 minutes, to prevent it from sticking to the bottom of the pot. The rice is done when it is tender and most of the liquid has been absorbed, creating a thick, creamy consistency.
  5. 5Remove the pot from the heat. Carefully remove and discard the 1 whole Cinnamon Stick. Stir in the 1 tsp of Lime Zest until it is well combined.
  6. 6Let the rice pudding cool in the pot for at least 10-15 minutes. This allows it to thicken further and the flavors to meld.
  7. 7Serve the rice pudding warm or at room temperature. Garnish each serving with 1/2 tsp of Ground Cinnamon.
