Vegan Bolo do Caco Garlic Bread

A vegan version of the traditional Madeiran Bolo do Caco, a flatbread served with garlic butter. Perfect as a side dish.

Ingredients

  • 3 cups All-Purpose Flour
  • 2 1/4 tsp Instant Yeast
  • 1 tsp Salt
  • 1 1/4 cups Warm Water
  • 1/2 cup Mashed Sweet Potato
  • 1/2 cup Vegan Butter
  • 4 cloves Garlic
  • 2 tbsp Fresh Parsley

Instructions

  1. 1In a large mixing bowl, combine the 3 cups of all-purpose flour, 2 1/4 teaspoons of instant yeast, and 1 teaspoon of salt. Stir these dry ingredients together until they are well mixed.
  2. 2Add the 1 1/4 cups of warm water and the 1/2 cup of mashed sweet potato to the dry ingredients. Mix everything with a sturdy spoon or your hands until a shaggy, cohesive dough forms.
  3. 3Transfer the dough to a clean, dry surface and knead it by hand for 5 to 7 minutes until it becomes smooth and elastic. Place the dough back into the large mixing bowl, cover it with a clean kitchen towel or plastic wrap, and let it rest in a warm place for 1 hour, or until the dough has visibly doubled in size.
  4. 4While the dough is rising, finely mince the 4 cloves of garlic and finely chop the 2 tablespoons of fresh parsley. In a small bowl, combine the 1/2 cup of vegan butter, the minced 4 cloves of garlic, and the chopped 2 tablespoons of fresh parsley, stirring until all ingredients are evenly mixed to create the garlic spread.
  5. 5Once the dough has risen, gently punch it down to release the air. Lightly dust a clean work surface with a small amount of the 3 cups of all-purpose flour. Divide the dough into 6 equal portions, then take each portion and flatten it into a round disc, approximately 1/2 inch thick, using your hands or a rolling pin.
  6. 6Heat a large skillet or griddle (at least 10-12 inches in diameter) over medium heat until it reaches approximately 350°F (175°C). Place one or two flattened dough discs onto the hot surface, ensuring they do not touch. Cook each side for 5 to 7 minutes, or until the bread is golden brown and cooked through, with a slightly firm texture; repeat with the remaining dough portions.
  7. 7Immediately after removing each cooked bread from the skillet, generously spread the prepared garlic mixture over one side while the bread is still warm. Serve the Vegan Bolo do Caco Garlic Bread right away.
