Ingredients

  • 1 cup Rice Flour
  • 1 cup Coconut Milk
  • 1/2 cup Water
  • 1/2 tsp Turmeric Powder
  • 1/4 tsp Salt
  • 2 cups Bean Sprouts
  • 1 cup Mushrooms (Oyster or Shiitake)
  • 3 stalks Green Onions
  • 4 tbsp Vegetable Oil
  • 1 head Lettuce Leaves
  • 1/2 cup Fresh Herbs (Mint, Cilantro)
  • 1/4 cup Dipping Sauce (Vegan Fish Sauce or Soy Sauce)

Instructions

  1. 1In a bowl, whisk together rice flour, coconut milk, water, turmeric powder, and salt to make a smooth batter.
  2. 2Heat vegetable oil in a large non-stick skillet over medium heat.
  3. 3Pour a thin layer of batter into the skillet and swirl to coat the bottom evenly.
  4. 4Add bean sprouts, mushrooms, and green onions over the batter.
  5. 5Cover the skillet and cook for 3-5 minutes, or until the edges are crispy and golden brown.
  6. 6Fold the pancake in half and cook for another 1-2 minutes.
  7. 7Serve hot with lettuce leaves, fresh herbs, and dipping sauce. Wrap the pancake in lettuce and herbs before dipping.
