Ingredients

  • 1 cup All-purpose flour
  • 0.5 cup Buckwheat flour
  • 1 tsp Dry active yeast
  • 1 tsp Sugar
  • 0.25 tsp Salt
  • 1.5 cups Warm water
  • 0.5 cup Aquafaba (chickpea brine)
  • 2 tbsp Olive oil
  • 4 oz Vegan caviar
  • 2 tbsp Fresh dill, chopped

Instructions

  1. 1In a large bowl, combine all-purpose flour, buckwheat flour, yeast, sugar, and salt.
  2. 2Add warm water and mix until smooth. Cover and let rise in a warm place for 1 hour.
  3. 3Beat the aquafaba until stiff peaks form. Gently fold into the batter.
  4. 4Heat a lightly oiled griddle or frying pan over medium heat.
  5. 5Pour 2 tablespoons of batter onto the hot griddle for each blini.
  6. 6Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. 7Serve the blini topped with vegan caviar and fresh dill.
