Ingredients

  • 2 cups Black Beans (canned, rinsed)
  • 1 large head Bok Choy (chopped)
  • 1 cup Red Bell Pepper (sliced)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Ginger (minced)
  • 0.25 cup Vegetable Broth
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Maple Syrup
  • 1 teaspoon Cornstarch
  • 1 teaspoon Sesame Oil
  • 2 tablespoons Peanut Oil

Instructions

  1. 1Heat peanut oil in a wok or large skillet over medium-high heat. Add garlic and ginger, stir-fry for 30 seconds.
  2. 2Add bok choy and red bell pepper. Stir-fry for 3 minutes until slightly softened.
  3. 3Add black beans to the wok. Stir-fry for 2 minutes.
  4. 4In a small bowl, whisk together vegetable broth, rice vinegar, maple syrup, cornstarch and sesame oil.
  5. 5Pour the sauce over the vegetables and beans. Stir-fry for 2-3 minutes until the sauce has thickened and everything is heated through.
  6. 6Serve hot over rice or quinoa.
