Ingredients

  • 1 pound Beets
  • 2 medium Carrots
  • 0.5 medium Celery root (celeriac)
  • 1 medium Onion
  • 3 cloves Garlic
  • 6 cups Vegetable broth
  • 2 tablespoons Apple cider vinegar
  • 2 leaves Bay leaf
  • 2 tablespoons Fresh dill
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 tablespoons Plant-based sour cream

Instructions

  1. 1Peel and chop the beets, carrots, celery root, and onion.
  2. 2Sauté the onion and garlic in a large pot until softened.
  3. 3Add the beets, carrots, and celery root. Cook for 5 minutes.
  4. 4Pour in the vegetable broth, add bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the vegetables are tender.
  5. 5Stir in apple cider vinegar.
  6. 6Remove the bay leaves. Adjust seasoning to taste.
  7. 7Serve hot, garnished with fresh dill and a dollop of plant-based sour cream.
