Ingredients

  • 1 1/2 cups All-Purpose Flour
  • 1 cup Rolled Oats
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 2 large, ripe Mashed Bananas
  • 2 tablespoons Flaxseed Meal
  • 6 tablespoons Water
  • 1/2 cup Maple Syrup
  • 1/4 cup Vegetable Oil
  • 1 teaspoon Vanilla Extract

Instructions

  1. 1Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. 2In a large bowl, whisk together the flour, rolled oats, baking powder, baking soda, and salt.
  3. 3In a separate bowl, combine the mashed bananas, flaxseed meal mixture (flaxseed meal mixed with water), maple syrup, vegetable oil, and vanilla extract. Mix well.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. 5Fill each muffin liner about 2/3 full.
  6. 6Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. 7Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
