Ingredients

  • 2 cups Corn kernels
  • 1/2 cup All-purpose flour
  • 1/4 cup Rice flour
  • 2 medium Green onions
  • 2 tablespoons Cilantro
  • 2 cloves Garlic
  • 2 medium Shallots
  • 1/2 teaspoon Turmeric powder
  • 1/4 teaspoon Coriander powder
  • 1/2 cup Water
  • 1/2 teaspoon Salt
  • for frying as needed Vegetable oil

Instructions

  1. 1Finely mince the 2 cloves of garlic and the 2 medium shallots. Thinly slice the 2 medium green onions, separating the white parts from the green parts. Finely chop the 2 tablespoons of cilantro.
  2. 2In a large bowl, combine the 2 cups of corn kernels, 1/2 cup of all-purpose flour, 1/4 cup of rice flour, the finely minced 2 cloves of garlic, the finely minced 2 medium shallots, the white parts of the thinly sliced 2 medium green onions, the finely chopped 2 tablespoons of cilantro, 1/2 teaspoon of turmeric powder, 1/4 teaspoon of coriander powder, and 1/2 teaspoon of salt. Stir all the ingredients together until they are evenly mixed.
  3. 3Gradually pour the 1/2 cup of water into the bowl with the corn mixture. Mix with a spoon or spatula until a thick batter forms. The batter should be thick enough to hold its shape loosely when scooped with a spoon.
  4. 4Pour vegetable oil as needed into a large, heavy-bottomed skillet or wok, filling it to a depth of about 1/2 inch. Heat the oil over medium heat until it reaches 350°F (175°C). To check if the oil is hot enough, drop a tiny amount of batter into it; it should immediately sizzle.
  5. 5Carefully drop rounded spoonfuls of the batter into the hot vegetable oil, ensuring not to overcrowd the skillet. Fry the fritters for 2-3 minutes per side, until they are golden brown and crispy, with firm and slightly darker edges.
  6. 6Using a slotted spoon or spider strainer, carefully remove the cooked fritters from the hot oil and place them on a plate lined with paper towels to drain any excess oil. Repeat this process with the remaining batter, allowing the oil to return to 350°F (175°C) between batches before adding more fritters.
  7. 7Serve the Vegan Bakwan Jagung hot.
