Ingredients

  • 1 cup Rice
  • 1 28 oz can Diced Tomatoes
  • 0.5 medium Onion
  • 2 cloves Garlic
  • 2 cups Vegetable Broth
  • 2 tbsp Olive Oil
  • 2 tbsp Fresh Basil
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Instructions

  1. 1Finely chop the onion and garlic. Drain excess liquid from diced tomatoes.
  2. 2Heat the olive oil in a medium saucepan over medium heat. Add the onion and cook until softened, about 5 minutes.
  3. 3Add the garlic and cook for 1 minute more.
  4. 4Add the rice and cook, stirring constantly, for 1 minute.
  5. 5Add the diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. 6Stir in the fresh basil, salt, and pepper. Serve hot.
